The Table
Awarded a Michelin Green Star, Espace Old Mill is a farm-to-table gastronomic restaurant nestled on an agricultural estate in the heart of the Eastern Townships. The five-course tasting menu evolves with each harvest.
Every dish is composed from what the land offers, week after week.
At Espace Old Mill, our wine list is entirely dedicated to natural wines. We highlight carefully selected Québec wines alongside a curated collection of privately imported natural cuvées. To accompany the tasting menu, a wine pairing is available to complete the farm-to-table dining experience.

The Farm
The market garden at Espace Old Mill was designed by Jean-Martin Fortier, a world-renowned organic farmer. More than forty varieties of vegetables and herbs are grown following the principles of regenerative agriculture, summer and winter alike.
The harvest is done the very day of service, steps from the kitchen. In the colder months, the greenhouse extends production and the frost concentrates sugars in the roots, yielding flavours impossible to replicate otherwise.
Some thirty local farmers and artisans, all located within a 50-kilometre radius, round out the sourcing throughout the seasons. From the soil to the plate, every dish carries the imprint of the Brome-Missisquoi terroir.

Our restaurant offers a 5-course tasting menu for dinner and 3-course for lunch. The menu changes constantly and evolves with the seasons. Our Parloir menu is an à la carte experience for our guests that want to enjoy a light meal and a drink at the bar or outside.
